Air Fryer Yuzu Glazed Duck Confit

Crispy duck legs in cooked in the air fryer with added garlic and herb potatoes for a simple yet elegant meal – without much washing up!

Ingredients
  

  • 2 Duck Legs
  • 15 New Potatoes
  • 2 tsp Yuzu Jam
  • 3 Cloves Garlic
  • Handful of Chives and Coriander
  • 1 tbsp Butter

Instructions
 

  • Marinade the duck legs with salt and pepper. Cut open a clove of garlic and rub the duck legs with it.
  • Preheat the air fryer to 200°C (392 °F).
  • Boil the new potatoes until they are soft and then strain. Flatten the potatoes with a fork and transfer them to the base of the air fryer.
  • Place the marinated duck legs above the potatoes, preferably on a wired rack and cook everything for 15 minutes (20 minutes for well done).
  • Glaze the duck legs three minutes before the duck finishes cooking.
  • Whilst everything in the air fryer is cooking, finely chop the remaining garlic and stir fry with butter on a low heat until it becomes super fragrant. Finally, stir in the finely chopped coriander and chives and season with salt and pepper.
  • When plating, drizzle the garlic and herb butter on the new potatoes and carefully place the glazed duck leg on top. Serve with vegetables of your choice.
  • Rest the meat for 10 minutes and then serve.
